Proof, a wine-centric Contemporary American that's about to open in prime Penn Quarter digs (775 G St. NW; 202-737-7663), will boast a hi-tech Enomatic pouring 40 vintages in tasting-size and full-glass increments, plus some 500 choice bottles (including California cult faves like Screaming Eagle) ensconced in climate-controlled splendor; the menu, crafted by chef Haidar Karoum (ex Asia Nora), will offer charcuterie, artisanal cheeses and inventive small- and entree-sized plates. All told, this ambitious entry should help its owner, well-regarded DC tax attorney Mark Kuller, achieve his tongue-in-cheek ambition of "making a small fortune out of a large one."
