Making Mendiants at Aureole

Charlie Palmer's new Aureole in NYC offers its chefs a number of amenities, including a kitchen that's dramatically larger than the one at its old Upper East Side digs. On a recent tour of the space, we caught up with head pastry chef Jennifer Yee in her chocolate room, where she offered us a quick tutorial in making mendiants.
