Earlier this week, the Buzz spoke with Kaz Okochi, chef-owner of Kaz Sushi Bistro, about his recently announced partnership with Richard Sandoval (Zengo) to open Masa 14, a glossy Asian-Latin spot above Logan Circle (1825 14th St. NW) that will serve small plates and specialized drinks in the early fall.
Zagat Buzz: How did you and Richard Sandoval get together?
Ken Okochi: I’ve known him for some 20 years. We’ve been talking about doing something together for a long time.
ZB: What are some of the dishes that Masa 14 will serve?
KO: I’m meeting with [Sandoval] next week to talk about the menu. The food will be fusion. There won’t be a sushi bar. I imagine that there will be some kind of ceviche, and possibly tacos with Asian flavors. There are lots of possibilities.
ZB: Will designing fusion fare be a new challenge for you?
KO: We don’t only serve traditional Japanese cuisine in my restaurant. I’ve been bringing multiple cuisines together for a long time. For example, right now, we are serving a sashimi gazpacho and a crudo – our very fresh raw fish dressed with olive oil, Italian-style – to bring out its flavor. We’ve been doing tartare for years.
ZB: Will it be hard to find cooks who can handle both Asian and Latin cuisines?
KO: Most people trained in American kitchens are familiar with a wide variety of flavors and cooking techniques.
ZB: What will your role be once Masa 14 opens?
KO: I’ll still be cooking at my own restaurant, but I will be at Masa 14 often, supervising along with Zengo’s executive chef.
