After finding success in a miniscule space on LA's Beverly Boulevard, chef Quinn Hatfield and his partner/pastry chef/wife Karen have moved their New American Hatfield's to the space that was home to Michel Richard's Citrus (followed by Alex, Meson G and Red Pearl); a massive remodel has brought an understated elegance to the space, which includes a wall of greenery, a whimsical linen chandelier and a multihued hardwood floor, and there’s now a full bar run by esteemed sommelier/mixologist Peter Birmingham.

The latest concept from the Innovative Dining Group (Boa, Katana, Sushi Roku), Delphine in LA's W Hollywood features a chef whose resume includes NYC’s Pastis and Balthazar churning out a pricey, all-day menu that ranges from tartine with Nutella to whole roasted lobster with fries; situated on the ground floor of the glass (and more glass) hotel, the modern bistro setting is decorated with revolving fans and photos of Old Hollywood.

Vibrant yellows and oranges whose brightness dims with the daylight festoon an undulating sculptural partition at Silk Road in Vegas' Vdara hotel and spa, and the dramatic design also includes shimmering golds, plush purples and walls of glass; though fundamentally Mediterranean (e.g. meze, tagines), the pricey, petite breakfast, lunch and dinner menus are laden with Middle Eastern and Asian influences, reflecting the eatery’s namesake trade route.

Twist, the recently opened Gallic destination in the Mandarin Oriental (at the Strip’s new CityCenter), marks the highly anticipated U.S. debut of French chef Pierre Gagnaire, whose cuisine is celebrated for its artistry and experimental twists; Adam Tihany designed the 23rd-floor space, which features hundreds of suspended illuminated globes, a wine loft and stunning skyline views.

Reworking the former Craftsteak digs in NYC into Colicchio & Sons, top toque Tom Colicchio is now offering a locavorish New American menu that’s something of an expansion of his Tom: Tuesday Dinner concept, focusing on improvisation, small-batch fare and farm-fresh ingredients; the expansive main dining room still retains its wine-rack room divider and mural of Way West Chelsea, but feels cozier thanks to a more muted color scheme, while the casual bar area up front vends artisanal beers and vittles from a wood-burning oven.

Chef Daniel Stern (MidAtlantic, ex Rae and Gayle) finds himself on top of things – the 37th floor of Two Liberty Place, in fact – with the handsome, contemporary-meets-deco R2L, where the spendy American menu is augmented by an assortment of clever bar snacks and drinks that pay homage to classic cocktails; every seat offers a view, either of the cityscape or the open kitchen.

The opportunity to munch on moules and frites is now ooh-la-la easier thanks to two new midpriced eateries from Atlanta restaurant veterans that opened at the end of last year.

In the new Sovereign Building, the Buckhead Life Restaurant Group (BLRG) opened its first Atlanta restaurant in eight years, Bistro Niko, offering a modern take on Parisian bistro fare.

Executive chef Gary Donlick has been wowing crowds since day one from his showcase kitchen placed prominently by the entrance. “It’s a cool kitchen and Pano [Karatassos, founder and CEO of BLRG] wanted to show it off,” says Bill Johnson of The Johnson Studio, the architectural design firm that has been working on the project since its inception.

Vintage sconces, rustic oak floors and Venetian mirrors marry with acres of white tile and a polished zinc bar for a warm, timeless feel. The scene is topped off with a captivating ceiling of plaster swirls and floral light fixtures from local artist Martin Dawe.

Nearly three years after the Farmers Market–adjacent neighborhood favorite Doughboys closed because of zoning issues, it's back as a nexus for all-day American fare, including the best-loved red velvet cake in town; an early morning crowd spreads onto the sidewalk, waiting for a table in the retro space with old-style lamps and polished wood surfaces.

Though it's been open for breakfast and lunch for a few months, the second outpost of Cafe Gitane in the West Village's trendy Jane hotel has recently added dinner service, offering the same reasonable French-Moroccan menu as the NoLita original; this new location accepts credit cards and reservations and adds some extra charm – large windows let the natural light flood in, while embroidered banquettes, calming pastel-mint walls and eclectic knickknacks create a cozy-yet-sophisticated neighborhood vibe, so far proving popular among chic, mostly European types (bring your French-English dictionary if you want to eavesdrop); N.B. a foosball table helps keep kids and competitive couples occupied.

Desperate Housewife Eva Longoria Parker and restaurateur Todd English, who partner on a same-named La La Land hot spot, pucker up for Sin City at this sexy steakhouse in Crystals at the Strip’s new CityCenter; Pan-Latin accents abound (paella, chorizo, chimichurri sauce), as do raw-bar temptations, while the velvet-and-bling-bedecked decor is pure Hollywood luxury (so too the tabs).
