New wave tropical, with enough flashes of tradition to make things authentic, seems to be the specialty of Chef Jean Marie Josselin at this Caesar's Palace hot spot. While other foods are certainly available, the creative fish dishes are the best way to go here. The accents to the various courses beautifully complement each dish, and are generally quite clever.
