Now that fine-dining restaurant Congress has rolled out an a la carte menu for the first time, you don’t have to throw down a cool $195 for an excellent dinner from chef David Bull. But with great freedom comes great responsibility. Not sure where to start? Let our gluttony be your guide.

First Course: Grilled aged beef lardo with radish, red grape and mint, $8

Second Course: Half-order of the potato gnocchi with ratatouille, golden zucchini and squash blossoms, $12

Third course: Ora King salmon belly with tomatillo succotash, smoked serranos and pumpkin seeds, $32
