New chef de cuisine Scott Higby replaces Grant Macdonald starting on Friday at the downtown restaurant. Higby will oversee the food at TRIO, the Lobby Lounge and the hotel’s banquets. The Austin American-Statesman notes that the chef, a native Houstonian, grows his own garden at home and will focus on keeping the restaurant local and seasonal. Plus he wants to create a rooftop garden at the hotel. Meanwhile Macdonald is leaving our city for the Four Seasons Resort in Santa Barbara.
