Last night Citygram Magazine celebrated Beetnik Foods’ one-year anniversary with a chef throwdown between Beetnik chef and owner David Perkins and Barley Swine’s savory-minded pastry chef Kyle McKinney. Here’s McKinney’s winning creation, a pastrami beef shin with mushroom tofu, beer mustard, garlic chips and pickled beets. We’re hoping it makes the menu at Barley Swine.
