At the top of our list of restaurants we’re excited about is Formento’s, the Italian-American concept from the team behind The Bristol. Opening in the West Loop later this year, the kitchen will be manned by chef Tony Quartaro, who has been sharpening his chops as sous chef at The Bristol and was also honored earlier this year as a Chicago 30 Under 30 “One Who Got Away”.
Get a first taste of what Quartaro will be cooking at Formento’s during a new Sunday supper series at The Bristol. The dinners, which start this weekend, will act as a test for the forthcoming restaurant. The first four-course dinner will include an Italian seafood salad, vegetarian lasagna primavera, chicken vesuvio and baked Alaska. Future menus are TBD. Each dinner costs $55 with optional $25 wine pairings.
