Chicago’s largest, and arguably most popular, farmers market is in the final stages of releasing its first cookbook. The book, with a foreword written by Rick Bayless, features a collection of locally driven recipes with stunning photographs by Chris Cassidy. Dishes such as whole wheat fettuccine with vegetables, elk chili and grilled coulotte steak come to life in the pages of The Green City Market Cookbook.
The project began last spring when the Green City held an open call for recipes using the market's produce. Over the past eight months, they've collected dishes from customers, local farmers and chefs, such as North Pond's Bruce Sherman's famous pumpkin parmesan gnocchi with turkey, sage, pears and pecans. In addition to 90 recipes, each contribution includes a story about how the recipe came to be. The recipes range from appetizers to entrees, soups and desserts for each season along with over 100 photos of the completed dishes and their key ingredients, so readers know what to look for at the market.
The cookbook hits shelves in July, but is available for pre-order now. Those who order an advanced copy will receive a mini-cookbook with three seasonal recipes for the holiday table. Order the cookbook online for $24.95.
