Chipotle Expands Tofu Option Along West Coast

Gourmet fast-casual chain Chipotle is upping its game with the addition of tofu to the list of protein options at more locations around the U.S. The Colorado-based Mexican eatery been testing its "Sofritas" filling made with chili-braised tofu in several Bay Area locations since February. Now they've announced they will be rolling it out along more Pacific Northwest markets this month and possibly "considering other markets" nationally for this fall. A spokesperson for the brand tells BusinessWeek that they hope to attract a new demographic who wouldn't normally consider Chipotle a healthy option, and they add that the filling may have some crossover appeal with non-vegetarians.
