Perfecto Rocher Cooks Paella, More at Smoke.Oil.Salt.

The culinary group led by Adam Fleischman (Umami Burger, 800 Degrees, Roadhouse BBQ) will open smoke.oil.salt, dubbed as an "authentic Spanish seafood restaurant and wine bar" in the former Angeli Caffe space on Melrose, which is no longer in the hands of Casey Lane and Itri.

In the kitchen you'll find one Perfecto Rocher, last executive chef at Lazy Ox post-Josef Centeno, who was tapped for his prowess with paella, fideua (a paella-like dish that features vermicelli-like noodles instead of rice), grilled seafood, suckling pig and more. The wine bar menu will have a selection of Spanish charcuterie and cheeses, more than 500 wines to choose from, plus sherries, Spanish beers, sangria and ciders. Look for the restaurant's debut in November or early December (7274 Melrose Ave.).
