Chef Ricardo Zarate and business partner Stephane Bombet (Paiche, Picca, Mo-Chica) head north to Santa Barbara to open Blue Tavern in November. Situated on State Street on the ground floor of Hotel Indigo just two blocks from the beach, the restaurant will offer a blend of California cuisine "as seen through the lens" of the Peruvian chef, meaning dishes like beet, tomato and burrata tossed with huacatay-pesto dressing; seafood risotto with tomato-aji base and salsa verde; and pizzas topped with anticucho-marinated ribe eye and potato. A slight departure for the group has Deysi Alvarez overseeing cocktails (not Julian Cox), although the focus on small-batch spirits and house-made tinctures remain. Blue Tavern will open for breakfast, lunch and dinner, and since it's the hotel restaurant, the menu will also be available for room service (121 State St.).
