December 6 will be opening night for The Fat Ham, Kevin Sbraga’s sophomore venture that’s coming to the Left Bank building on Walnut, just across the Schuylkill in University City. He’s describing the restaurant as having “a no boundaries approach to the food, drink and hospitality of the American South.” What that translates to is updated comfort food, barrel-aged cocktails and a rustic dining room.
Meals are meant to be enjoyed family-style, through shared small plates were inspired by Sbraga’s recent trips across several Southern states, including a stop at the Tabasco factory. Smoked lamb belly comes with cola sauce, oyster sliders are served on yeast rolls with gribiche (egg-pickle-caper sauce) and hummus comes with boiled peanuts.
The former Tria Wine Room space is not large, but somehow the renovation by Eimer Design (also responsible for the interior at Sbraga) outfitted the room with 45 seats, spread across mis-matched chairs and banquettes upholstered in soft cowhide. There’s a full bar serving creations from head bartender Anwar Morgan. Look forward to the 3131 (a barrel-aged mix of rye, Averel, Dolin sweet vermouth and bitters) and The Fat Apple (hard and soft cider plus ginger ale).
Online reservations aren’t yet live, but will soon be available. The Fat Ham will be open 5-10 PM, Sunday-Thursday and 5-11 PM, Friday-Saturday.
