A good restaurant culture is one where cooks working for great chefs learn and are inspired enough to go off and launch their own spots, and Philadelphia right now has that. Marc Vetri provided a throwback example recently when he posted this snapshot of his line crew at Vetri back in 2002, noting that all those in the photo now run their own places (the group includes Michael Solomonov, Dionicio Jimenez of El Rey and Joey Baldino of Zeppoli).
The Insider has word on two new upstarts getting ready to go it on their own. Zahav sous chef Tyler Akin is planning to open Stock, a pho-focused restaurant in Fishtown at 308 East Girard Avenue (East of Frankford but a few blocks closer than Sketch Burger). With wife Nicole Reigle overseeing front-of-the-house goings on, he plans 20 seats and a January launch with a mostly Vietnamese menu.
Former Jose Garces sous chef MacGregor Mann has a more American slate of offerings planned for Junto, which The Insider reports is coming to Chadds Ford. Amish techniques combined with modernist skills and PA-sourced ingredients will fill out the menu of the BYO, which will live in a space currently under renovations, hopefully ready by spring.
