Opening Alert: Sancho Pistola’s Opens January 29

Ever since our fun interview with all three partners, we’ve been looking forward to the launch of Sancho Pistola’s, and now we have a date. The Fishtown bar will open at 7 PM on Wednesday, January 29, serving “a hip take on Mexican classics and superlative beer.”
It’s the sophomore venture for Casey Parker and Joe Gunn, who together own Jose Pistola’s in Center City. For the Girard Avenue joint, they’ve brought on chef Adan Trinidad as a partner, and he’ll be overseeing food at both venues.
That means starting next week, Fishtown folks will have a neighborhood spot for hamachi tiraditos with serrano pepper, scallop tacos with pickled raisins and a very reasonably priced raw bar. Entrees will include a pork porterhouse with mole verde and corn purée.
Those looking for a place to watch the Super Bowl with a minimum of obnoxiousness, take note, as the bar does have a lot of TVs and will be showing the game, but it’s not a “sports bar,” as the trio made clear to us last month.
