Betty’s Pie Whole Saloon has been softly open since last December and it's slowly but surely become a happening Encinitas stop for something delicious, wrapped in crust. While the shop's sassy older sister, Elizabethan Dessert’s, is all soft, pale and dainty, Betty’s Pie Whole Saloon sports warm wood furnishings and a potbelly stove sitting under the day’s specials. According to owner Elizabeth Hunt Harris, the shop is her alter ego and a chance to really go for it in the pie department.
“We were doing pies before at Elizabethan, but we just didn’t really have the room. We still offer a few there but not the great variety we have at Betty’s,” says Harris.
Here, some 20 different sweet and savory pies – available in both individual and 9-inch sizes - are available on any given day. Some flavors rotate daily and many sell out before closing. New pies will be continually introduced with a few experimental ones - like a TBA "Eskimo Pie" filled with ice cream - popping up on the menu. Tender pulled chicken mixed with diced red onion and spicy barbecue sauce fills a cheddar chipotle crust in the convenient and easy-to-eat "Cowpoke" hand pie.
A must-try pie with a cutesy name, "Get-Along-Kielbasy" is filled with poultry kielbasa, red potatoes, mushrooms, spinach and peas in a rich Asiago cheese béchamel and baked into a herbed butter pastry.
The "Field Hand" pie is made from yeasted dough that is rolled thin and filled with broccoli, chopped chicken and cheddar cheese. Then it's baked and branded with a bold "BP."
"Mississippi Mud" is as decadent as it looks. Homemade marshmallows, brownie bits and luscious butterscotch and chocolate drizzle over a Belgium chocolate pudding with chocolate shortbread crust.
A combination of fresh strawberries and rhubarb pokes underneath the intricate lattice of sweet almost cake-like dough in the strawberry-rhubarb pie.
Simple ingredients of butter, sugar, flour, peanut butter and, of course, peanut butter cups make the basis of the rich "Peanut Butta'" pie.
