There's a friendly anime-style dumpling depicted on the side of the intensely green Dumpling Station truck that's wearing a variety of facial expressions – the  look of surprise perhaps the most appropriate for  a food about to be eaten.

The dumplings served at the Dumpling Station come eight to an order, available both steamed and pan-fried (in other words, potstickers), filled variously with pork and baby leeks, chicken and scallions, pork and kimchi, beef and kimchi, and veggies with glass noodles.  According to founders Helen Pan and Chris Aragon, their inspiration comes from the "Land of Kimchiana," where the cooking is, apparently, part Taiwanese, part Korean and wholly zany.

Which means the they also offers fare like won tons filled with cream cheese and jalapeños, won tons with Nutella and banana and garlic-wasabi fries.
