Quote of the Day: Vegetarian Ethics

You have blood on your hands when you eat vegetarian.

Blue Hill chef Dan Barber argues against strict vegetarianism, especially in the Northeast, where the ecological conditions call for eating a lot of meat. He thinks that vegetarians don’t “live on this higher plane of ethics,” since getting them fresh produce year round burns a lot of fossil fuels and negatively impacts natural living systems.
