Bringing flavors from an underrepresented-in-NYC corner of Northern Europe to a neighborhood always looking for the next thing, the pricey East Village arrival Vandaag features Dutch-Danish cuisine by an ex-Corton chef – from popped barley and bitterballen oxtail croquettes to roasted hen for two – and an extensive cocktail list showcasing the region’s aquavits, genever gins and beers; the theme extends to its modernist interior with a large picture window looking onto bustling Second Avenue.
