The celebrity chef behind New York's famous Aureole has just opened his first restaurant in the Lone Star State. Located inside Downtown Dallas's Joule Hotel (which opens in the spring), Charlie Palmer at the Joule is offering diners an "artisanal" take on French and American cooking that includes dishes like tagine braised pheasant with truffle-smoked bacon ragout ($65) and crisp black sea bass with melted Vidalia onions ($30). According to Palmer, the New American fare will move "beyond free range. We're into free will."
Hyperbole aside, the restaurant is a cornerstone of the new hotel's launch and, in a first for Palmer, also comes with an extensive wine shop called Next Vintage. Staffed by sommeliers from the restaurant, Next Vintage carries a rotating selection of 250 wines curated by head sommelier Drew Hendricks.
