After two years, the Windy City's ill-fated ban on the sale of foie gras has been repealed. The City Council, with Mayor Daley running the session, voted 37–6 last week to ditch the ban, the only one of its kind in the nation. While the new move didn't make animal activists happy, it certainly pleased many local gourmands who have loudly bemoaned the city's ban (not to mention chef Doug Sohn, the only person actually fined for defying it). The law isn't officially off the books until June 6th, but Chicago chefs are itching to put the delicacy back on people's plates. Cornered by the Chicago Tribune at a recent benefit at the Field Museum, 16 local toques including Grant Achatz (Alinea) and Rick Tramonto (Tru) even shared their plans for the luscious liver in the coming weeks. Achatz will serve it wrapped in a crispy shell of mango and soy sauce, Tramonto will be adding foie gras with rhubarb and pineapple relish to the Tru menu ASAP – it had never left the menu at his two suburban restaurants in Wheeling, Tramonto's Steak & Seafood and Osteria di Tramonto.
