But here’s something you might not know yet: when the restaurant opens mid-September, the menu will be largely driven by skillfully carved fish from master sushi chef Tsui “Otto” *** Tou (ex Oishii, Ginza). And just in case you thought the only thing green in Foxboro was the football field, think again. In keeping with the sustainable design practices used in building Patriot Place, Skipjack's will feature bamboo flooring, low VOC paint, recycled glass countertops and high-efficiency kitchen technology.
