February is proving to be a busy month for chef Chris Parsons. You would think participating in the Bocuse d’Or qualifying round this past Saturday would have been enough on his plate. But Parsons is gearing up for a big change later this month. His Winchester seafood restaurant, Catch, will close after Valentine’s Day, with plans of a future relocation to Boston or Cambridge in the works. What will happen to the Catch space? Parsons will open Parson’s Table, a concept offering locally sourced American comfort food, on February 25. The sample menu includes Island Creek oysters, chicken with brown-butter risotto and apples, and mac 'n' cheese with Niman Ranch ham (781-729-1040; 34 Church St., Winchester).
