For a limited time, Spiaggia's guests can savor an eight-course tasting menu spotlighting many of Italy’s rarest ingredients; designated as Degustazione di Produtti di Denominazione di Origine Protetta – or Protected Denomination of Origin – they carry a distinction reserved for products created according to treasured local traditions dating back as early as the 12th century.
Culinary gems will include fruity Monti Iblei extra virgin olive oil, Piemontese hazelnuts, Castelluccian lentils and cheeses of Friuli Venezia Giulia, including a type created by a long-forgotten monk in the Abbey of Moggio ($165 per person; add $90 for wine pairings; 980 N. Michigan Ave.; 312-280-2750).
