After being the executive chef at Smith & Wollensky for more than 10 years, Hans Aeschbacher is leaving to be the new executive chef at Trader Vic’s, effective June 1. He plans to keep the menu the same, but will put his signature touch on its island-influenced dishes (312-642-6500).
Chef Noah Sandoval, a graduate of The Culinary Institute of New Orleans and former chef at Verbena restaurant in Richmond, VA, has replaced Top Chef contestant Radhika Desai at Wicker Park’s Between Boutique Cafe and Lounge. His new spring menu features venison carpaccio with arugula, peach and rosemary, and sea scallops with sweet corn, sweet potato and tarragon (773-292-0585).
