In addition to its usual selection of artisanal American craft hams, &lt;a href="http://www.zagat.com/Verticals/PropertyDetails.aspx?VID=8&amp;amp;R=138721"&gt;The Publican&lt;/a&gt; in the West Loop has been curing a Slagel Family Farm leg in salt and roasting it. The finished ham sports a light smokiness and is served sliced with goat butter and peasant bread (312-733-9555).&lt;/p&gt;

Chef &lt;strong&gt;Chris Pandel&lt;/strong&gt; at Bucktown&amp;rsquo;s &lt;a href="http://www.zagat.com/Verticals/PropertyDetails.aspx?VID=8&amp;amp;R=138445"&gt;The Bristol&lt;/a&gt; has been serving &lt;em&gt;zampone,&lt;/em&gt; cotechino sausage&amp;ndash;stuffed trotters braised in pork stock and then sliced and fried. The dish is served with housemade Goose Island beer mustard, grilled fris&amp;eacute;e and a sherry vinegar&amp;ndash;bacon vinaigrette (773-862-5555).&lt;/p&gt;

&lt;a href="http://www.zagat.com/Verticals/PropertyDetails.aspx?VID=8&amp;amp;R=148360"&gt;Longman &amp;amp; Eagle&lt;/a&gt; chef &lt;strong&gt;Jared Wentworth&lt;/strong&gt; has created a rolled poached pig&amp;rsquo;s head accompanied by stinging nettles, shaved apples, winter ramps, fried quail egg and mustard sauce (773-276-7110). &lt;/p&gt;

On a related note, April 10th&amp;#39;s &lt;a href="http://baconfestchicago.com/"&gt;Baconfest Chicago&lt;/a&gt; tickets may have sold out in 10 minutes flat last Thursday, but there&amp;#39;s still a way to get in on the fatty festivities. One of the sponsors, Nueske&amp;#39;s Bacon from Wittenberg, WI, is putting on an amateur bacon cook-off &amp;ndash; those interested should send in an original dish description and photo, and contestants with the top five entries get free tickets to the sold-out event. But be prepared to work: competitors will serve samples to judges at the event, and a winner will be awarded later that evening. The deadline for entries is March 18, so get cooking!
