The Chelsea Flower Show runs from 19–23 May, and Tom Aikens is getting a jump on the theme with a five-course spring flower menu. Dishes include roast scallop with nasturtium and pickled carrots; broad-bean flowers and shoots with broad-bean mousse, Cabecou and emulsion; confit of salmon, pickled apple, radish and viola; and poached rhubarb with rose ice cream. Sounds pretty as a picture (£45; available at lunch and dinner Tuesday–Friday; 020-7584-2003; reserve online).
