Paperfish, restaurateur Joachim Splichal's first foray into Beverly Hills since he closed his landmark Max au Triangle there more than 20 years ago, opened today for lunch. Housed in the former Maple Drive space, this modern Mediterranean showcases fish served “en papillote,” though there will be plenty of seafood served “Warm,” “Chilled” and “Raw.” It will begin serving dinner on January 8th (345 N.
