Master sushi chef Katsuya Uechi wants you to eat raw fish in style. Not content with having two ultratrendy Katsuyas in Brentwood and Hollywood, the chef and his team are readying to open their third Philippe Starck–designed location in less than two years in Glendale's new Americana shopping center on May 2nd (702 Americana Way). Then in September, Katsuya Downtown will open in the new LA Live complex. But that isn't all Uechi has up his sleeve. Aping other top toques (Nobu Matsuhisa, anyone?), he plans to aggressively expand his sushi chain with a Miami outpost next winter and a Las Vegas outpost in 2010. After that, we'll just have to wait and see.
