As Eater first reported, Walter Manzke seems to be following in the footsteps of other former Bastide chefs with his recent move to the brasserie Church & State. First Alain Giraud, the original chef at Bastide opened Anisette Brasserie, and now the acclaimed veteran Manzke has signed on with one of Steve Arroyo's newest ventures, where he's offering a taste of Paris to the Downtown art district.
