In response to three years of protests from a group called
Farm Sanctuary, Wolfgang Puck has joined with the
Humane Society in a campaign to fight animal cruelty at his 15 high-profile restaurants (
Spago,
Chinois on Main, etc.), as well as within his catering and frozen food empire.
What this means is wiener schnitzel made from free-range veal, eggs from cage-free chickens, lobsters not kept in holding tanks for long periods and an end to foie gras (seared or otherwise). Because of increased food costs, prices at his restaurants will rise $1 to $2 per item, Puck says.
