Ushering in the current wave of fancy, have-it-your-way burger joints is SoMa's Custom Burger/Lounge in the garishly pink Best Western Americania, where locals and hotel guests are handed forms and miniature pencils at the counter and asked to build their own meal from a choice of proteins (beef, fish, lamb, veggie), toppings, sauces and buns; next door, a darker, swankier lounge mixes customizable cocktails; N.B. breakfast is in the works.
