Even the Ritz-Carlton is rethinking its stategy in these tough times, rolling out two initiatives that provide cheaper, less-formal dining options. The bar's "Small Bottles/Small Bites" program offers several sweet and savory plates – think tuna tartare ($18), crispy chicken wings ($8) and panna cotta ($8) – as well as 111 half bottles of wine. And for the first time, the Dining Room's à la carte menu is available at the bar (415-773-6198; reserve online).
