Chef Fabio Trabocchi is leaving Maestro in mid-August to become chef-partner at NYC's Fiamma Osteria (where Catherine Zeta-Jones recently boned up for her role as a chef in the upcoming movie No Reservations). Fans of Trabocchi, a native of the northern Italian region called Le Marche, can savor his cooking locally until August 21st, when the restaurant takes its annual vacation. And if, as rumored, Fiamma's owners build a new West End hotel, he may be back in town in two or three years.
