Oenophiles Rejoice! Two New Wine Bars Arrive

Wine bars continue to proliferate

High-tech wine systems are all the rage these days, as these two new spots in DC and McLean demonstrate:

Hidden away above Dupont Circle, Veritas, a trendy, exposed-brick-walled wine bar, is already attracting the cognoscenti and the curious who peruse an embossed tome listing some 180 choices maintained in temperature-controlled dispensers; flights with cheese and charcuterie pairings can be ordered (and customized), with owner/wine buff Adam Manson (ex Sonoma) standing by to referee (2031 Florida Ave. NW; 202-265-6270).

At Evo Bistro, a chic new McLean wine bar and bistro, grape nuts can audition more than 30 wines in one-, three- or five-ounce pours using an automated Enomatic system and choose small or larger Mediterranean plates to match; its midday deal (salad plus three tapas for $12) lets customers save their money for the retail wine shop (1313 Old Chain Bridge Rd., McLean VA; 703-288-4422).
