Okochi runs one of the few U.S. restaurants – Kaz Sushi Bistro – licensed to serve this once-a-year imported food treasure. In late January when he gets word that the shipment has arrived, he will offer a traditional five-course fugu menu for $150 per person.
What will this fugu dinner be like? First, the fish will be served as sashimi, followed by its skin in a salad, then as tempura, then cooked at the table with vegetables as a hot pot and finally the fish broth will be used to flavor a rice dish.
