Next month, dessert devotees will be loosening their belts when pastry chef David Guas (ex Acadiana, Ceiba, DC Coast and TenPenh) opens Bayou Bakery in the former Murky Coffee space in Arlington's happening Clarendon section. Reflecting Guas’ Louisiana roots, the menu will offer fried pies, beignets and pralines, along with soups and sandwiches, and there will be what he calls a “serious” coffee program. Plans are to equip the two-story space (once used as a firehouse) with reclaimed wood furniture and black-and-white photos of the South (3211 Wilson Blvd.).
