Traditional combinations and modern techniques mingle throughout the four courses, with each dish accentuated with a wine pairing from the Grateful Palate's portfolio. Start with a salade de legume with charred eggplant vinaigrette and raw sheep's milk pecorino, then settle into skate “grenobloise” with haricot vert, golden raisins, almonds and capers. The third course will bring you roasted squab breast with chestnut foie gras agnolotti, bing cherries and squab jus while the final touch to the evening comes in the form of chocolate banana nut bread with caramelized banana milk and chicory ice cream.
