Join Polo Dobkin, executive chef of Brooklyn hot spot Dressler and educator for the night, as he brings his simple and satisfying New American flavors across the Williamsburg Bridge into Manhattan. Dobkin will first ready your palate for a lesson in flavors with an amuse of marinated beets before he shows how to create his impeccably prepared and delicious fare. Dishes to be demonstrated while you enjoy hand-selected wines include chilled spring pea soup, asparagus and coppa with bitter greens, poached egg and white truffle vinaigrette, pan roasted scallop and braised short rib served with Boulanger potato, onion jam and horseradish cream. Finally, before you disperse to whichever borough you call home, enjoy the night's final taste, a passion fruit crème caramel with macadamia nut crunch.

$95 includes amuse, five courses with wine pairing and chef-led tutorial. All reservations must be secured with a credit card. Cancellation policy is 48 hours notice to receive credit for another class within the spring season at De Gustibus. No refunds, only credits issued for future classes.

Join chef-owner Sue Torres as she whips up an authentic four-course meal paying homage to Mexico's staple ingredient – corn – at her Chelsea hot spot. In each dish the star ingredient is featured in various types of fresh-ground masa, handmade from Sue's molino. The evening begins with an amuse to tease the palate. Next up is a shrimp empanada with roast poblano coulis and radish salsa paired with Suzy's Smoking Margarita followed by cow's tongue tacos over lard tortillas and served with a smooth Mexican beer. Finally, to finish off this corn-centric evening, a sweet corn tamal with cherry, pinapple and dulce de leche alongside your choice of Sueños' signature coffee or crema de mezcal.

Songkran Water Festival for Thai New Year

Experience the most important Thai holiday by marking the Thai New Year at this haute SoHo destination where a five-course feast is being prepared in celebration of Songkran, or Water Festival. Executive chef Lulzim Rexhepi will explain the traditional rituals of the holiday, including the washing of the Buddha, offering of food and water blessing to cleanse the spirit. After that you'll be served a meal that includes traditional holiday dishes from varied Thai regions including cod cooked in broth from the northwest; pork carpaccio and pomelo salad typically prepared in Chiang Mai; massaman curry from the south; and finally, mini Kanum Kruk corn cakes cooked in clay pots. In respect of the festival's traditional food offering to Thai monks, a portion of the proceeds will be donated to Action Against Hunger.
