New wave tropical, with enough flashes of tradition to make things authentic, seems to be the specialty of Chef Jean Marie Josselin at this Caesar's Palace hot spot. While other foods are certainly available, the creative fish dishes are the best way to go here. The accents to the various courses beautifully complement each dish, and are generally quite clever. Save room for dessert! The Macadamia Nut Souffle with Coconut Pudding survives each menu makeover--a tribute to its popularity and its tastiness. The waitstaff can be a bit slow when things are crowded, but they do a very good job.
