In the 16th, chef Pascal Barbot's "modern, elegant" Haute Cuisine reaches the "pinnacle of grace" in his "incredibly imagined and prepared" plates "accompanied perfectly" by "well-chosen wines"; the tasting menu (no à la carte) is "frightfully expensive" and the "smallish" dining room (where jackets must be worn), which features "almost-private" balcony seating, is "not as grand" as some might prefer, but the chef's "genius" combined with "faultless" service make for "a miracle of perfection" – though the real miracle might be scoring an "impossible reservation"; P.S. closed Saturday to Monday.
