MANY DIFFERENT STYLES OF PIZZA IN ITALY Each region has their own version and pizzas differ greatly from region to region. Naples is the birthplace of Neapolitan pizza and of the Verace Pizza Neapoletana (VPN), the organization that certifies Neapolitan pizzerias throughout the world.
EACH NEAPOLITAN PIZZA IN UNIQUE The pizza is formed by hand and is cooked quickly in a wood fired oven at 800 degrees for roughly 90 seconds. This creates a pizza that has the following characteristics:

FAST COOKING TIME The addition of sauce, cheese and other toppings creates a pizza center that is generally soft and/or wet. This does not mean that the pizza is undercooked and is a typical characteristic of authentic Neapolitan pizza. With this is mind, Neapolitans traditionally eat their pizzas uncut with a knife and fork. At Tutta Bella, our tradition is to cut our pizzas so they can be shared amongst everyone at the table.
