For about a year now the Austin barbecue trifecta has consisted of Franklin Barbecue, La Barbecue and John Mueller Meat Co., all of which are trailers or started as trailers. But this week Texas Monthly barbecue editor Daniel Vaughn has added the Blue Ox Barbecue trailer to that short list. His second visit deemed it “the best barbecue I’d eaten after 9:30 PM” (a good recommendation, since the only other place to find great smoked meat after 1 PM in this town is at Freedmen’s), but a lunchtime visit confirmed that the pitmasters really know what they’re doing with the smoker that once belonged to Aaron Franklin, even when compared to the masters. They might need a bit more time to give the brisket that extra oomph, but the pork shoulder and pork sausage were spot on. Add excellent German potato salad, pancakes and a location behind quirky coffee shop the Buzz Mill, and you’ve got yourself some Austin barbecue.
