Trash Fish Dinner at The Squeaky Bean
Chefs Collaborative, a national network of chefs and restaurateurs focused on culinary sustainability, has long been promoting seafood species that are historically undervalued by the market but perfectly delicious. Now its work is being recognized with a five-course feast at The Squeaky Bean in LoDo, where chef Theo Adley will cook alongside six other chefs both native and visiting — among them Stephen Stryjewski of New Orleans’ Cochon and Pêche, Mike Lata of FIG and The Ordinary in Charleston, S.C., and Michael Leviton of Boston-area restaurants Lumière and Area Four, as well as Kelly Whitaker of Basta and Cart-Driver, who’s spearheading the initiative locally.
