It’s a fact: no restaurant has done more to put Colorado on the national dining map than Frasca Food and Wine has. Its James Beard Award-winning owners, chef Lachlan Mackinnon-Patterson and master sommelier Bobby Stuckey, would be fully within their rights to spend the Boulder destination’s 10th birthday tooting their own horns. Instead, they’re approaching the milestone with their usual graciousness. Following an online survey of their loyal customers’ favorite dishes, they’re serving a special menu August 4-9 composed of the Friulian kitchen’s greatest hits. We’re including it here in full (minus the dessert selection, which is TBD).
Gazpacho: Heirloom Tomato, Armenian Cucumber and Filone
Insalata: Emma Farms Wagyu Beef, Butter Lettuce and Anchovy
Maiale: Berkshire Pork Belly and Seasonal Vegetables
Tagliatelle: Deep Sea Lobster, Scallop and Sweet Corn
Raviolo: Summer Squash, Ricotta and Egg Yolk (pictured)
Risotto: Vialone Nano, Pioppini Mushroom and Mosto d'Oro Olive Oil
Manzo: Colorado Beef Short Rib and Farm Vegetables
Maiale: Berkshire Pork Leg, Western Slope Peach, Fingerling Potato and Pancetta
Mista di Mare: Langoustine, Scallop and Sea Bass
It should go without saying that if you don't book your table ASAP, you'll probably have to wait another 10 years to join the party. But just in case, you've been warned.
