Fresh off the celebration of Fiola’s third anniversary, chef-owner Fabio Trabocchi announced today that Michael Maksimowicz has moved up from the chef de cuisine position at Fiola Mare into the executive chef position at his Penn Quarter flagship. Maksimowicz also has worked as sous chef under acclaimed Florida chef Michelle Bernstein and later cooked in such local kitchens as Vidalia, Rogue 24 and Blue Duck Tavern.
Also announced today is the appointment of beverage director and sommelier Casper Rice, who comes to Fiola from The Inn at Little Washington. Before that, he racked up quite the résumé working at such places as Michael Mina, RN74 and Alexander’s Steakhouse.
While Rice has been at the restaurant since June 3 and Maksimowicz has been heading the kitchen there since July 5, today is the first announcement of the changes at the Italian fine-dining room.
