First Look: ABCV From Jean-Georges Offers Veggie-Focused Fare

The long-awaited plant-based eatery is ready for prime time

The gist: It's almost been three years since the first announcement, but chef Jean-Georges Vongerichten and ABC Carpet & Home CEO and creative director Paulette Cole are back. After their wildly successful collaboration at ABC Kitchen and ABC Cocina, the two unveiled their newest vegetarian cafe in Flatiron yesterday. To start, the eatery will focus on breakfast and lunch, with dinner to follow.

Avocado lettuce cups 

The food: Chef de cuisine Neal Harden (Pure Food & Wine, Maimonide) helms the kitchen that will focus on vegan and vegetarian friendly dishes with organic, non-GMO and sustainable ingredients. A few highlights on the menu include a kabocha squash dip made with sumac, mint, tahini and served with pita. Indian dosas come with sprouts, avocado and yogurt. Avocado lettuce cups (above) house toasted cumin, serrano peppers, lime and pepitas. Author and alternative medicine expert Deepak Chopra contributed an Ayurvedic (a holistic healing practice) recipe of rice and lentils with yogurt, mint, turmeric and fermented carrots to the menu as well. The drinks: Not surprisingly, cold-pressed, organic juices headline the menu. There's also a long list of housemade kombucha, matcha and healthy shakes, as well as fair trade coffee and tea, and a selection of organic wines.

Inside the dining room

The space: With ABC Carpet & Home as the partner, the space itself is worth the trip. Rustic whitewashed wood beams and gray concrete floors infused with a smattering of colors add a bit of industrial flavor to the space. Lime green chairs, a banquette made of hand-woven fabric and rugs by Aymara women in the Andes, and recycled glass panels in pinks and oranges add bright pops of color. Bold chandeliers polish off the space.
