What's all the fuss about this food truck with a funny name? Well, the food for one. The menu was created by owner Matthew Mui, who's been a chef in restaurants like RA Sushi, Soma and Kata Robata. Not surprisingly, the truck offers plenty of Japanese-American fusion in dishes like the pork belly Don Juan with sous-vide pork belly, soft-yolk egg, fried mushrooms, pickled cucumbers, kimchi and takuan (pickled daikon) and a bibimbap maki roll stuffed with bulgogi, kimchi, oyster mushrooms, pickled daikon and other goodies, served with gochujang sauce (a spicy Korean red chili sauce). As for that funny name, Mui explains that Muiishi is a combination of his last name and the Japanese word 'oishii,' which translates to 'delicious,' and 'maki' plus 'rritos' represents the maki roll combined with a burrito.
