Israeli-born chef/owner Einat Admony ( Taim, Balaboosta and Bar Bolonat) recently revealed a few details about another forthcoming concept, Combina, which she will open in November with husband Stefan Nafziger. We reached out to Admony for the lowdown and she revealed that the menu, created with Bar Bolonat executive chef Molly Breidenthal, will combine flavors of both Spain and Israel in shareable small plate form. Expect dishes like eggplant escabeche-dill garlic yogurt, salted cod doughnut with Hawaij aioli; and squash with peanut picada. MYT Design helped transform the SoHo space (formerly conveyor belt sushi joint, Taka Taka) with a vibrant mural from an Israeli street artist and an open kitchen. Stay tuned for more details.
